What you’ll need to make this delicious buffalo chicken salad recipe: 

The ingredients for this buffalo chicken salad are really simple but they go together well and can be customized to your liking.

Use more or less buffalo style hot sauce to suit you and your family’s tastes! You can include the cheese or leave it out, it’s up to you!

I find that salad dressing really isn’t necessary with this one but occasionally we toss on some ranch which compliments the buffalo chicken flavor really nicely.

  • romaine lettuce, chopped
  • roma tomatoes, diced
  • cucumbers, diced
  • red onion, diced
  • Mozzarella cheese shreds, for garnish
  • Ranch dressing, for garnish

I don’t like spicy things, will I enjoy this recipe? 

While I can’t say for sure, I think you will! This recipe is not overly spicy. The great thing is that you can use a little less hot sauce and then add more if it’s not spicy enough for your liking. 

Another great way to tone down the heat is by adding some ranch dressing to the salad. It’s a nice flavor combo and it keeps the heat at bay. 

If you like other buffalo chicken flavored things I think you’ll enjoy this salad. The cool and refreshing salad ingredients also make this recipe a little more balanced than a traditional buffalo chicken dip recipe! 

How to make a quick and easy buffalo chicken salad: 

I was not kidding when I called this a quick and easy buffalo chicken salad. You can have this tasty meal on the table in less than 30 minutes. While the chicken cooks you can prep your other ingredients and even a side dish if you want! A nice crusty bread or some homemade croutons go great with this salad!

Place the chicken and the hot sauce in a saucepan and heat over medium heat until the chicken reaches an internal temperature of 165F, approximately 12 minutes.

Turn off the heat and let it sit for about 10 minutes. Remove from heat and shred the chicken using two forks. Add romaine, tomatoes, cucumbers, and onion to a bowl.

Mix all the salad ingredients before adding the chicken.

Top with warm buffalo chicken. Top with cheese and ranch dressing.

Are there other ways to cook the chicken? 

You can cook your chicken however you’d like. If you have an Instant Pot you can cook your chicken in there very quickly. Follow the Instant Pot instructions based on weight! 

If you like to use the Slow Cooker like I do, here’s a great recipe for shredded chicken

When cooking your chicken in the Instant Pot or Crockpot make sure you wait until it’s done cooking to add the hot sauce. You don’t want to splatter hot sauce everywhere when venting your pressure cooker. 

How many does this buffalo chicken recipe serve? 

The recipe as listed will serve approximately four people. It’s four servings of 2 cups of chicken and 4 cups of salad. If you are serving smaller portions you may break it down any way you choose or double the recipe if you need to serve a larger crowd. 

Can I meal prep with this salad recipe? 

You can use this buffalo chicken salad recipe for meal prep but I would make the salad and the chicken and then keep them separated until you are ready to eat the salad. 

Separated containers like these divided meal prep containers are really helpful in situations like this! The chicken is added when warm and will wilt the lettuce if it sits around for too long. Making the recipe like this you’ll be able to enjoy these leftovers or for lunches for several days with no ill effects to your salad.

Ingredients

  • 2 cups chicken breast, cooked & shredded
  • ½ cup buffalo sauce
  • 4 cups romaine lettuce, chopped
  • 3 roma tomatoes, diced
  • 2 cucumbers, diced
  • ½ red onion, diced
  • Mozzarella cheese shreds, for garnish
  • Ranch dressing, for garnish

Instructions

  1. Heat the chicken and sauce in a skillet until warm 
  2. Turn heat off and allow to sit for about 10 minutes 
  3. Add romaine, tomatoes, cucumbers, and onion to a bowl 
  4. Top with warm buffalo chicken 
  5. Sprinkle on cheese and drizzle on ranch 
  6. Serve and enjoy!
