Tater Tot Breakfast Casserole

Ingredients: Frozen tater tots, butter, olive oil, breakfast sausage, onions, milk, half and half, seasoned salt, cayenne pepper, eggs, bell peppers, shredded cheese!

First we need to line up the tatertots in a greased 9×13 baking dish.

Add the olive oil to a large skillet so we can prep the sausage and onions which need to cook for about 8-10 minutes.

Set them aside to cool & then layer the mixture over tater tots. In a bowl mix  the milk, half and half, seasoned salt, cayenne, eggs, bell peppers, half of both kinds of cheese, and salt and pepper.

Give them a mix to combine and then pour mixture over the tater tots & sausage. Add the rest of the cheese, cover the baking pan with foil and put it into the refrigerator overnight.

In the morning you pop it into the oven at 325 degrees F for 25 minutes. Remove the foil and bake for another 20-35 minutes until the top is browned and the casserole is cooked through.
