Try out this warm and filling zucchini casserole recipe.

It's so simple to put together for any occasion, and its a great option for your weekly meal prep.

– Zucchini – Mayonnaise – Cheddar cheese – Eggs


Boil a pot of water, add the diced zucchini, and cook for 2 minutes. Drain and cool and set aside (10 minutes).


In a  medium bowl, combine the zucchini, mayonnaise, mustard, cheddar cheese, eggs, and garlic pepper powder. Mixed well until combined.


Pour into a greased 2-quart baking dish.


In a small bowl, combine the Panko breadcrumbs with melted butter, and mix well. Pour breadcrumbs over the top of the casserole.
