This pasta salad recipe can be made with whatever kind of pasta you like. I usually use a gluten free variety but you can use what you like.

Different shapes are up to you as well. Shells work great, elbows, and even penne works great for this one. If you want to pack a little extra protein into your pickle pasta salad you can always use chickpea pasta which usually has quite a bit more per serving than regular varieties.

Can I make this without the pickles?

Ingredients

  • 16 oz Box Cooked Noodles
  • 1/3 Cup Dill Pickle Juice (from jar)
  • 2 Cups Dill Pickles (Chopped in Fours)
  • 1 8oz Block Colby Jack Cheese (cubed)
  • 1 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 2 Tbs Fresh Dill (chopped)
  • Salt & Pepper (to taste)

Instructions

  1. Place cooked noodles into a large bowl.
  2. Add cheese, pickles, mayonnaise, sour cream, salt, pepper & fresh drill to the bowl.
