Why make pasta salad with chicken?
Making pasta salad with chicken is how I beef up my regular pasta salad recipes in order to add some extra protein. This recipe keeps me full longer and transforms an easy side dish into a full meal.
Another reason I love adding chicken to this tasty Asian pasta salad is the fact that it makes this a one dish meal that doesn’t need reheated. I can keep this portioned out in dishes for lunches and dinners that we can eat on the go without having to worry about reheating!
Can I make this a gluten free pasta salad recipe?
You can make this pasta salad with whatever kind of pasta you like. If you need to stick to a gluten free diet just use your favorite gluten free pasta. There’s a lot of variety out there now so using gluten free pasta is easier than ever!

Here’s what you’ll need to make my pasta salad with chicken:
There’s nothing to crazy about this recipe. It’s an easy pasta salad with chicken. You can use your Instant Pot or air fryer to make the chicken or just pick one up from the store ready made if that’s easier for you! Either way, this will be a tasty recipe the whole family will love.

- 1 cup red and green bell peppers
- ¼ cup green onions
- ½ cup crunchy Chinese Lo Mein noodles
- Garnish with sesame seeds and fresh cilantro if desired
How to make Asian chicken pasta salad:
- Add pasta to 6 quarts of lightly salted water. Cook according to the instructions on the bag. Remove the pan from the stove and drain the water.
- Cut rotisserie chicken into cubes or strips and set aside.
- Rinse and cut peppers into rings and set aside.
- Rinse and cut green onions and set aside.
- Add the pasta to a large bowl and chill in the fridge. Once the pasta is completely chilled, remove from the fridge.
- Add chicken, coleslaw mix, peppers, onion, and Lo Mein noodles on top of the cooked and chilled pasta.
- Pour your Asian Style Sesame Vinaigrette dressing onto the salad and using a large spoon, toss all the ingredients until well incorporated. Garnish with sesame seeds if desired.
You can make this recipe in advance if you like. Everything holds up really well in the refrigerator during the week. I like to make a batch on Sunday night and then we can eat from it all week long.
If you are going to meal prep with this recipe I’d add the noodles fresh with each serving so they stay crisp. If you don’t mind them getting a little soggy you can add them when you make the pasta salad!
