These no bake cereal cookies are kind of like peanut butter Rice Krispie treats but in cookie form! It’s a perfectly portable snack that everyone will devour.

How many cookies does this recipe make?

My recipe for no bake cereal cookies without corn syrup will make about 24 cookies. Depending on the size you might end up with more or less so it will change based on how big or small you make your cookies.

There’s nothing tricky going on here once you see how easy these cookies are to prepare you’ll be making them any time you have a craving for sweets.

Are these cereal no bake cookies gluten free?

The base recipe of these no bake cereal cookies is gluten free naturally. You will have to choose your mix-in’s carefully if you are keeping away from gluten.

Things like chocolate chips, M&M’s, or nuts will be fine, use gluten free pretzels if you want to do a sweet and salty twist!

The great this is that these cereal candy treats are versatile. You can easily swap in your favorite toppings and additives to make these cookies into your favorite new dessert.

Please note that you will need to select a crisp rice cereal that is gluten free if you need them to be Celiac approved. We usually use the Great Value brand which are gluten free but you can choose whichever brand works for your own individual dietary needs.

What do I need to make no bake cereal cookies without corn syrup?

The four main ingredients of these no bake cereal cookies is peanut butter, marshmallows, crisp rice cereal, and white chocolate melting wafers.

If you want to add in some extras you can use things like m&m’s, salted nuts, chocolate chips, pretzel bits, or sprinkles. There’s not end to the possibilities.

How to make peanut butter Rice Krispie cookies:

Let’s take a look at this easy step by step guide to making no bake cereal cookies. It’s easy and quick and the end result is perfect for sharing!

Line a countertop with parchment or wax paper. You need at least 18” of space.

Melt white chocolate melting wafers and peanut butter in a double boiler.

Stir until the white chocolate peanut butter is smooth.

Remove from heat.

Immediately mix in ½ of the Rice Krispie or crisp rice cereal.

Add the marshmallows and stir until they are incorporated.

Now is the time to add mix-ins like chocolate chips, nuts etc.

Add the remaining cereal.

Finishing the mixing of the ingredients

Drop the mixture by the spoonful onto the parchment paper.

Allow to cool and dry for 15 to 20 minutes.

Cover and store leftovers for 2 days, if they last that long!

  • 2 cups of crisp rice cereal
  • 1 pound of white chocolate melting wafers

Instructions

  1. FYI – Rice Krispies are NOT gluten free. They contain malt which contains gluten. You should understand this before you market a recipe as gluten free – even though it is everyone’s individual responsibility to understand what we consume.

    1. We have updated the recipe to make it clear that you can use any CRISP RICE cereal that works for your own personal dietary needs and that you do NOT have to use the name brand version! Thank you for the reminder, tho I do feel there are likely more polite ways to approach the subject.

    1. I’ve never made them that way so I can’t say for sure how they’d turn out but you could definitely try it out!
