Easy Sprite Cupcakes Recipe

Soda and boxed cake mixes are actually a pretty interesting combination that results in a flavorful and moist cake or in this case, cupcakes. You get a little extra boost of flavors based on whichever kind of soda you use, today we’re using a lemon lime soda like Sprite.

The other interesting fact about using soda when you are using a boxed cake mix is that you don’t actually use all the other ingredients that you would normally use for the boxed mix. Keep an eye on the recipe card here and ignore the instructions on the back of the cake!

We will be making some changes and it can be confusing if you think you need everything on the box plus everything we are using here. Just follow the recipe written below and disregard the directions on the box mix.

Can I make these Sprite cupcakes gluten free?

You can substitute a gluten free cake mix if you have one that you like. They are often different ounces than regular cake mixes so keep an eye on that and just adjust the soda accordingly to accomodate the difference.

If there is a very sizable difference in ounces I would either cut it in half to match this recipe or double up the other ingredients so that it’s matching as closely as possible in order to avoid any potential issues or fails!

What do I need to make cupcakes with lemon lime soda?

This recipe uses Sprite soda, lemon cake mix, cream cheese frosting which is made from cream cheese, butter, powdered sugar, milk, lemon extract, lemon zest, and some yellow decorating sugar. You can also use canned frosting!

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are great for all kinds of baking and not just cookies! My husband loves them for making biscuits, pizzas, and more!

How to make lemon Sprite cupcakes:

Preheat the oven to 350F.

Line a muffin tray with cupcake liners and set aside.

In a large bowl, beat together the white cake mix and Sprite for 2 minutes.

Scoop the cupcake batter with a ⅓ cup measuring cup into the prepared cupcake liners.

Bake for 25-30 minutes, until an inserted toothpick comes out clean.

Allow the cupcakes to cool completely before frosting.

In a large bowl, beat together the cream cheese, butter and powdered icing sugar for 2 minutes, then add the lemon extract and lemon zest. Beat to incorporate, then add the milk as needed.

Scoop the frosting into a piping bag fitted with a large star tip.

Swirl the frosting onto the cupcakes to form a rose pattern.
