How to make strawberry cheesecake tacos
Step 1: Start by cutting the wheat tortillas with a mold of 4 inches in diameter. You can also use mini tortillas if you find them more convenient or replace them with corn tortillas if you prefer to make this gluten-free.
Step 3: Now you have several options to shape the tortillas into taco shells. My favorite is to take a donut mold or cupcake mold, turn it around, place the tortillas in the gaps between the donuts, and heat it in the oven for 10 to 15 minutes over 350 F (180º C). Another option is to place them inside a Tupperware with the desired form.
Step 2: Mix the sugar and the butter in a bowl and heat it in the microwave for 1 minute until the butter melts. Spread the mixture of butter and sugar over the tortillas on both sides with a pastry brush.
Step 4: Meanwhile, your tacos are in the oven. You can start whipping the cream or, if you prefer, you can use store-bought whipped cream saving some effort and time. Tip: you can add and mix 1 tbsp of sugar and 1 tbsp of grated chocolate to make the whipped cream sweeter and tastier.
Step 5: Cut the strawberries into little pieces and fill the taco shells with your whipped cream.
Step 6: Finally decorate with the strawberry pieces and chocolate syrup to your liking.

Technically as written they are not gluten-free but you’ll see a note below and I’ll mention it here, you can easily swap out the whole wheat tortillas for corn tortillas which are already smaller and you can use them for a GF version of this recipe. If you have access to the smaller 4-inch corn or flour tortillas used for street tacos this recipe is easier with those in either case because they don’t need to be cut down to size!
You can make about 8 dessert tacos with this recipe as written. I wouldn’t make more than you can eat or share in a single day because they won’t store well and should be eaten as soon as possible. Think about how real tacos from Taco Bell tacos are after a few hours in a bag… the shells just can’t take that kind of moisture and still be delicious for very long.

A friend of mine said she takes her Taco shells, any kind, and hangs them over two wires of her oven shelves and bakes them like that. Makes perfect taco shells.
@Judy P, It does work but if the shells have sugar on them–your oven is going to be stinky when you are done. If you are making plain taco shells-lightly spray the shells and make sure the oven is HOT when you start
