I love making no bake desserts. They’re one of the only ways I really want to be in the kitchen when there are so many other things going on. The holidays are no exception.
When Thanksgiving rolls around and there are tons of recipes to be prepped and cooked, baked and basted, I’m tapped out by the time desserts are involved. No bake sweet treats like this pumpkin pudding are a lifesaver!
Everyone devours these delicious puddings and they can be built in individual servings so that everyone can just grab one and go sit down to enjoy it while chatting after dinner. You can also prepare this in one big dish if you like and serve it that way.
I think it looks much more beautiful layered individually but it is a little bit more work to do it this way. If you want to just layer it in a bigger bowl and serve it by scooping it out into bowls, that’s totally fine as well!

What do I need to make no bake pumpkin pudding?
This recipe uses cinnamon graham crackers, pumpkin pudding, pumpkin pie spice, pumpkin puree, milk, cream cheese, vanilla, whipped topping, and some small containers.
You can use vanilla pudding mix with some pumpkin pie spice added, 1 tablespoon in each batch of vanilla pudding will do the trick.
You can also use gluten free graham crackers if you want to make this layered dessert gluten free! Everything else, apart from the graham crackers, should be gluten free naturally but just keep an eye on your labels.
I also remind people to check because brands switch things up all the time, I know most of you who eat gluten free already check everything religiously because it is not fun to find out you missed something!

There are only a few easy steps to this recipe. You’ll love how simple it is to whip everything up and prepare these layered treats for your holiday table.
Keep in mind that this recipe can be prepared in advance by a day or two as well so you don’t have to stress about making them on the same day you want to serve them. I usually prepare them the same day but that’s only because they are super easy and quick to prep.
In a large bowl, add the pumpkin puree, vanilla and cream cheese. Using a stand or electric mixer, beat until smooth.
Add in the pudding, pumpkin pie spice and milk. Beat until well combined.
Gently mix or fold in 1 cup of whipped topping until well combined.
In a small jar or bowl, alternate adding in the graham cracker crumbs, pudding and the remaining whipped topping until the container is full.
How much does this recipe make?
This recipe will make 2, 8 ounce servings or 4, 4 ounce servings. You can double or even triple the recipe without any issues, just double or triple the amounts on all of the ingredients and you will be all set.
Remember that it will depend on how big your containers are. The 4 or 8 ounce mason jars make for a really cute presentation on these treats if you are trying to woo the crowd at your next holiday gathering!

- 15 Cinnamon Graham Crackers, crushed
- 1-3.4 ounce box of *pumpkin pudding
- 1 tablespoon pumpkin pie spice
- 1/3 cup pumpkin puree
- 1 cup whole milk
- 4 ounces cream cheese, softened
- 1 teaspoon vanilla
- 1 ½ cups whipped topping, divided
- 4 or 8 ounce containers
