Here’s what you’ll need to make my baked yellow squash recipe:

This baked yellow squash is really simple but delicious. It’s easy to make but it’s deliciousness is in the simplicity.

We’ll need just four ingredients to make a delicious side dish that you’ll be craving all summer long. First we need some fresh medium sized yellow summer squash.

Summer squash is similar to zucchini but it has a slightly thinner skin. Yellow squash and other summer squash varieties are harvested in the summer when their skin is relatively thin, it’s what separates them from other more thick skinned squash, zucchini, etc.

Aside from some fresh yellow summer squash you’ll also need freshly grated parmesan cheese, garlic salt, and fresh ground black pepper.

How to make this cheesy baked squash:

First we need to preheat the oven to 425 degrees F and line a baking sheet with foil, parchment paper will also work, and coat it with cooking spray.

Clean the squash and then cut slices that are about 1/4 inch thick. Arrange the slices on the prepped baking sheet, try not to leave much room between the slices on the sheet.

Sprinkle the squash with the garlic salt, fresh ground pepper, and the parmesan cheese.

Bake for about 20 minutes until the parmesan melts and starts to brown. If they don’t seem to start browning you can broil for a minute or two! Serve immediately.

  • 2 medium yellow summer squash
  • Garlic salt

  • 1/2 cup freshly grated Parmesan cheese
