I call this the easy way to make chicken fajitas because you really can’t mess it up…and it’s super easy…I know, it’s a bit on the nose but truly, this recipe could not be more simple and it comes together in just a few minutes! 

This is a family friendly chicken fajitas recipe that you can customize to your family and their tastes. If you prefer less spices you can dial that back. If you want more peppers and onions, add them in! The recipe itself is very forgiving and is quick and easy to double if you are feeding a crowd.

This base chicken fajitas mixture also keeps pretty well in a Crockpot if you wanted to serve this up outdoors for a party, family gathering, or backyard BBQ. 

Can I just use fajita seasoning? 

You can, but I prefer to mix my own. Not only is it more cost effective I can also control how much of everything goes in and what kind of additives are included when purchasing my spices. If you are gluten free this is an important note because not all seasonings and spices (especially pre-made mixes) are gluten free!

Is this a gluten free chicken fajitas recipe? 

Yes! None of the ingredients contain gluten as long as you check your spices for additives. Use corn tortillas or gluten free tortillas and you’ll be all set. Aldi’s Live G Free brand tortillas are great as are the Mission brand gluten free tortillas that you can find in the bread isle at Walmart! 

Is this recipe friendly for any other allergens? 

It is also a dairy free chicken fajitas base recipe. Make sure you check your tortillas for any added dairy ingredients like you would for gluten in the spices. Different companies add all sorts of things to their recipes so you can end up sneaking in some ingredients without knowing it! If you top them with cheese be sure to use a dairy free variety or skip it altogether! 

What you’ll need to make these delicious chicken fajitas: 

  • 1 pound chicken
  • 1 cup sliced bell peppers
  • 1 yellow onion diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon red pepper flakes
  • Juice of 1/2 lime
  • 2 teaspoons red wine vinegar
  • Corn, flour, whole wheat, or gluten free tortillas

What kind of skillet should I use to cook these chicken fajitas? 

I like to use a cast iron pan or skillet to cook these chicken fajitas. You can use an electric skillet if you like or you can just use a nonstick skillet on your stovetop. I will say that I think the best flavor and texture comes from using cast iron for this tasty recipe, we’ve made them a bunch of different ways though and they are always yummy so use whatever works for you! 

How to make my easy chicken fajitas: 

  1. In a small bowl mix spices and onion together. 
  2. Coat your skillet in olive oil and begin to fry your chicken.
  3. While your chicken fries add your sliced bell peppers and spice blend. 
  4. Squeeze the juice of one-half lime over your seasoned chicken.
  5. Pour 2 teaspoons red wine over the chicken before you finish cooking.  
  6. Pull from the heat when chicken is fully cooked and serve with your favorite toppings.

How do I serve these sizzling chicken fajitas? 

You can serve them up a couple of different ways. I like to serve them on gluten free tortillas or corn tortillas. You can use any type of tortillas that you like; there are so many flavors and sizes of tortillas these days! 

Another way that these chicken fajitas are great is with some fresh or steamed veggies and rice. You can serve this mixture over rice for a fajita bowl recipe! 

If you are cutting back on carbs or just want something a little lighter you can always serve this base chicken fajitas mixture over lettuce for a nice salad! The possibilities are truly endless.
