When to make loaded baked potato salad: 

We eat it year round but you just can’t beat these flavors during the summer months. I love to grill during the summer so we eat a lot of grilled chicken in various forms (thighs are my favorite right now) and we also like to pair this up with other cold salads for a quick and easy “serve yourself” kind of meal night when the whole family gathers. 

Can I meal prep with this potato salad recipe? 

You sure can! If there’s on thing I have to say about this salad it is that you may want to double it right away. Trust me, this is a family favorite and it gets gobbled up faster than sheet cake at a birthday party!

Leftovers go well for lunch the next day and you can easily meal prep this for a fast side dish option during the week.

What do I need to make this loaded baked potato salad recipe? 

You will notice that these ingredients are easy and simple. All of these things are usually readily available in my fridge or pantry and that’s what I love about this recipe. Loaded baked potato salad comes together quickly and easily and make a great side dish for dinner, lunch on the go, or a party or even dish! 

  • 3 lbs. Gold potatoes
  • 1 ½ c. Sour cream
  • 2 c. Shredded cheddar cheese
  • 12 Pieces of bacon crumbled
  • ⅓ c. Chopped green onions
  • Salt and pepper to taste
  • Olive oil
  • Garlic chives for garnish

How to make the best baked potato salad: 

Note: you can easily cook your potatoes however you like. I find this is the most flavorful way to make the potatoes and get them soft enough in a short amount of time. If you like using the Instant Pot you can always use that (or another electric pressure cooker) to get the potatoes done more quickly. 

  1. Preheat oven to 450 degrees. 
  2. Chop 3 pounds of gold potatoes into bite sized pieces. 
  3. Place the potatoes on a baking sheet in a single layer, and drizzle them with olive oil. Toss them lightly to coat all sides of the potatoes in the olive oil. 
  4. Add salt and pepper to taste to the potatoes. 
  5. Bake the potato pieces in the oven for 20 minutes until they are fork tender and starting to brown. 
  6. Remove the potatoes from the oven and allow them to cool completely. 
  7. Place the cooled potatoes in a large mixing bowl, and add 1 ½ cups of sour cream. Stir carefully to combine well. 
  8. Add in 2 cups of shredded cheddar cheese. 
  9. Pour in 12 pieces of crumbled bacon.
  10. Mix in ⅓ cup of chopped green onions. 
  11. Serve chilled with chopped garlic chives sprinkled on top for garnish.

This recipe doesn’t call for mayonnaise?!?

You caught that, huh? You’re right! It does not call for mayo. You don’t really need it because of the sour cream. If you really prefer the taste of mayo to anything else for potato salad you can certainly include it and let us know how it comes out. I think that it comes out so well with the sour cream since we’re shooting for the flavor of a loaded baked potato and not a classic potato salad.
