This recipe calls for elbow macaroni but you can use whatever kind of pasta you like! If you want to make this a gluten free pasta salad you can add some pasta that is gluten free and just keep an eye on your sauces to be sure they’re also certified gluten free. The other ingredients will be naturally free of gluten.

Nothing strange or crazy in this one! A simple recipe for creamy pasta salad that everyone will love. It’s got chunks of cheese, vegetables, hard boiled eggs, and more! It’s the perfect pasta salad to take for lunch on the go!

  • 1 16-ounce box of macaroni pasta
  • 1 package of powdered Italian Dressing 
  • 2 cups mayonnaise 
  • ¼ cup carrots
  • ¼ cup celery
  • ¼ cup peppers
  • ¼ cup pickles
  • 3 ounces cheddar cheese
  • 3 ounces pepper jack cheese
  • 1 can sweet peas
  • 3 hard-boiled eggs, sliced

This recipe is really easy to make. Just like all of my pasta salad recipes, it’s quick and simple. There’s no muss, no fuss, and anyone can make this great recipe at home.

You can easily substitute the vegetables for ones that you know your family will enjoy. If there’s something you know they’ll pick out or eat around you can just leave it out! The recipe is very forgiving and you can’t really mess it up!

  1. Add pasta to 6 quarts of lightly salted water. Cook according to the instructions on the bag. Remove pan from stove and drain the water. 
  2. Rinse and dice celery and set aside.
  3. Rinse and dice carrots and set aside.
  4. Rinse and chop green peppers and set aside.
  5. Rinse and chop red peppers and set aside.
  6. Drain pickles, cut in half, and set aside.
  7. Cut cheeses into small cubes and set aside. 
  8. Remove chilled pasta from fridge.
  9. Whisk the Italian dressing into the mayonnaise. 
  10. Add the ingredients, except the cheese, to the top of the pasta. Add the dressing and using a large spoon, toss all the ingredients until well incorporated. 
  11. Top the Macaroni Pasta Salad with the cheese and enjoy!
