If you’ve never tried to make your own pop tarts you have to give this recipe a go. It’s really simple to make pop tarts and the homemade ones are SO MUCH BETTER! They’re delicious and the possibilities for fillings and toppings are endless.

The great thing about these pumpkin pop tarts is that they’re filled with pumpkin which is super nutritious. You’ll feel like you are having a snack or a special treat but in all reality you are eating a nutrient dense super food!

Pumpkin is loaded with fiber but also with vitamins and minerals without much in the way of added calories or fat. Pumpkin is considered a superfood because of the amazing vitamins and minerals it brings to the table and of course…the antioxidants.

Here’s what you’ll need to make homemade pumpkin pop tarts:

This recipe is made in the air fryer and it uses ready made pie crust. We will also use pumpkin, milk, pumpkin spice, vanilla icing, sprinkles, and eggs.

I’m sure you’ll notice pretty quickly that it’s nothing surprising or complicated. That’s on purpose! I don’t do complicated when it comes to the kitchen and especially when it comes to baking.

Not scared of a little baking, right? Here’s an iced pumpkin cookies recipe that everyone will love! They’re super indulgent and moist!

You can use other types of filling if you want but this one is perfect for fall and for all the pumpkin lovers out there!

How to make my pumpkin pop tarts recipe:

In a mixing bowl, add pumpkin, 1 egg, milk & pumpkin spice.

Mix well.

All of the finished pop tarts with sprinkles on the cooling rack.

Roll out the pie crust and cut out 3 inch rectangles.

Place 1 Teaspoon of pumpkin mixer on every other rectangle.

Place a rectangle on top of the pumpkin rectangles & press edges together with a fork.

Egg wash each rectangle.

Place in the air fryer for 5-8 minutes on 375. These fry really quick so keep an eye on them! 

Remove from the air fryer and smother in icing.

Sprinkle the sprinkles on top and then you are ready to serve!

Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • Pre-Made Pie Crust
  • 15oz Can Pumpkin
  • 1/3 Cup Milk
  • 1 Tbs Pumpkin Spice
  • Vanilla Icing
  • Sprinkles
  • 2 Eggs

Instructions

  1. In a mixing bowl, add pumpkin, 1 egg, milk & pumpkin spice.
  2. Mix well.
  3. Roll out the pie crust and cut out 3 inch rectangles.
  4. Place 1 Teaspoon of pumpkin mixer on every other rectangle.
  5. Place a rectangle on top of the pumpkin rectangles & press edges together with a fork.
  6. Egg wash each rectangle.
  7. Place in the air fryer for 5-8 minutes on 375. These fry really quick so keep an eye on them!
  8. Remove from the air fryer and smother in icing.
  9. Sprinkle the sprinkles on top and then you are ready to serve!

Notes

You'll need to put them into the air fryer in batches, each batch will only need 5-8 minutes to cook!
