Keto Zucchini Pizza Bites

I love pizza but pizza is not exactly a healthy recipe, right? When I’m craving pizza flavors I try and find more healthy ways to enjoy it. These zucchini pizza bites are one of the ways that you can enjoy pizza without having to worry about carbs and calories.

Making these pizza bites could not be easier. I love that I can whip these up for an after school snack, dinner, or even lunch! With just a few simple ingredients it’s easy to include this recipe on a clean or healthy eating plan as well.

Are these keto friendly pizza bites?

Absolutely, you can enjoy these zucchini pizza bites on keto! They’re low carb but full of flavor. It’s one of the best things about keto in my opinion. Finding new ways to enjoy my favorite recipes is fun and easy.

What will I need to make this easy pizza recipe?

There’s really not much too these pizza bites. You will need the following ingredients and you can find almost all of these things with a quick trip to the store. Most of them I usually have on hand so it’s nice for days when I don’t want to go to the store for ingredients for dinner!

  • 20 thick slices of Zucchini (Roughly 3 small zucchinis sliced)
  • ½ tbsp Olive oil
  • ½ cup low carb marinara sauce
  • 1 cup Mozzarella shredded cheese
  • 20 Slices pepperoni
  • Italian seasoning to taste
  • Grated parmesan cheese to garnish
  • Salt and pepper to taste

How to make keto zucchini pizza bites:

Making these tasty little pizza bites could not be easier. You’ll want to make sure that you give them a try…once you do you will be hooked just like me!

  1. Preheat the oven to 350 degrees. 
  2. Cut 20 thick slices of Zucchini, and toss them in ½ tsp of olive oil. 
  3. Place the zucchini slices on a rack on a baking sheet, and sprinkle with salt and pepper to taste. 
  4. Bake for 10 minutes, and remove from the oven. 
  5. Top each slice of zucchini with a thin layer of keto-friendly marinara sauce. 
  6. Place some of the mozzarella cheese on each zucchini slice, and top each slice with pepperoni. 
  7. Sprinkle on Italian seasoning to taste and bake for 5-10 minutes until the cheese is melted and browned on top. 
  8. Remove the zucchini pizza bites from the oven and let them sit for a few minutes. Garnish with some grated parmesan cheese and serve.

Can I prepare these in advance?

I wouldn’t make these pizza bites in advance. The only drawback to working with zucchini is that it tends to release a lot of liquid so it’s not great for meal prep purposes. You can make these the same and they are pretty delicious but leave them sit and I think you’ll be disappointed.

I don’t think they’ll reheat very nicely either so it’s not the best recipe for making in advance.

How many carbs are in these pizza bites?

Each serving is about 4 pizza bites and that is about 3 grams of net carbs so it’s not a bad trade off. You can change the cheese / sauce ratios to get that number down even further but I’ve found that this combination works for me and is low enough in carbs that I feel good about eating these on Keto!
