Zucchini Egg Nests

Making zucchini egg nests is easy and fun! These tasty egg nests are a perfect way to start the day. They’re keto friendly and super simple!

Egg nests are sometimes made with noodles or cloud bread, this version is great for those of you who are watching your carbs! The bed for these eggs is actually made from spiralized zucchini.

What are zucchini noodles?

This recipe uses zucchini noodles to make the egg nests. Zucchini noodles or “zoodles” as they’re affectionately called on the internet are just long thin strands of zucchini. You can make them with a spiralizer.

Spiralizers come in many shapes and forms and at a ton of different price points. I’ve had this spiralizer for about 4 years and it is still working great. It comes with a bunch of different blades so you can make different shapes and it spiyralizes pretty much anything you can stick in there!

Why use zucchini noodles for these egg nests?

You could use regular noodles if you wanted but in this case I think the zucchini noodles give a good flavor and texture to the end result.

The egg nests are also awesome for a nutrient packed breakfast that is low in carbs but high in protein. The zucchini noodles don’t add any extra carbs or sugar to the recipe and therefore the energy you get won’t drop off and leave you feeling hungry and tired in a short time.

What you need to make zucchini egg nests:

  • 1 Cup of Zucchini noodles
  • 1 Tbsp Olive oil
  • 1 Tsp Garlic powder
  • 2 Eggs
  • Salt and pepper to taste

You can make your own spiralized zucchini or you can buy the zoodles already prepared. Many grocery stores make them and have them available in the fresh produce section!

How to make egg nests with zucchini noodles:

The great news is that this recipe is super simple to make. The whole thing takes about 10 minutes. Who doesn’t have ten minutes in the morning to make themselves a wonderful hot breakfast?!

This recipe will get you started off on the right foot in the morning. If you need an easy, quick, and filling meal to start your day, these egg nests are where it is at!

  1. Heat 1 tbsp of olive oil in a skillet over medium-high heat. 
  2. Add the zucchini noodles into the skillet, and toss with the garlic powder as well as salt and pepper to taste. 
  3. Separate the zucchini noodles into two even piles, and form them into the shape of a round nest. Create a flat and slightly hollowed out area on the top of each of the piles. 
  4. Gently crack one egg on the top of each of the zucchini noodle nests. 
  5. Let the noodles and egg continue to cook until the whites of the eggs are solid, and the yolk is still runny like a sunny side up egg would be. 
  6. Top with more salt and pepper to taste if desired, and serve.
