White Chicken Chili Recipe

This white chicken chili recipe made on the stovetop is perfect for fall but we eat it year-round! A white chicken chili beans recipe that the whole family will love. It’s not too spicy, very flavorful, and it doesn’t take too long to cook!

White chicken chili is one of those hearty soup / stew style recipes that are great for the colder months of the year. It’s a great dinner recipe but the leftovers make a nice lunch that you can easily store and pack for the following day.

Making chili recipes is easy and fun. You’ll see below that this one doesn’t take much prep work and then it’s just a matter of letting it simmer a bit so the flavors can really come together and elevate.

Do I have to make this chicken chili on the stove top?

You can try and adjust the recipe to suit your needs for Instant Pot or Crockpot cooking but I’ve made this particular recipe specifically for the stove top. Chili can take a long time to cook so I get wanting to cut out some of that time but I can’t say for sure how it will turn out because this particular recipe was designed to be made as written.

I like that this recipe is start to simmering time within 25 minutes. There’s no muss, no fuss, and it comes out perfectly every time. You simmer for an additional 45 minutes but that’s not really time that you have to spend right there with it, it’s more inactive time than anything.

I know different things work for different people so just do what you like! If you make this in the Instant Pot or the Crockpot and it turns out well, feel free to leave a comment so others can try that method as well 🙂

What do I need to make white chicken chili?

Here is what you will need to make my version of white chicken chili! It’s super easy and contains ingredients that are easy to bump up or down depending on your flavor preferences.

This recipe uses chicken, onions, jalapeños, great northern beans, chicken broth, garlic, cumin, oregano, and shredded cheese!

Do I have to use rotisserie chicken for this chili recipe?

No, you do not need to use rotisserie chicken for this recipe. You don’t even have to use a store-bought one, you can make your own with the Instant Pot or your Air Fryer. Here’s a great collection of rotisserie chicken recipes that you can make at home.

If you are wondering if you can use raw chicken in this recipe the answer is yes, that is accounted for in the recipe. Using cooked chicken will cut down on your time!

We make shredded chicken with the crockpot sometimes and that works well in this recipe too.

When you head into the kitchen to make some of these great recipes you’ll want to have the best tools on hand.

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are great for all kinds of baking and not just cookies! My husband loves them for making biscuits, pizzas, and more!

Of course mixing bowls, a mixerspatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

How to make white chicken chili:

This is a really simple recipe. If you are new to making chili recipes this one is a great place to start. It’s foolproof and you won’t have to worry about the recipe getting messed up.

Heat a teaspoon of olive oil in a 6 quart dutch oven over medium heat

Add Onion and saute for 4-6 minutes until lightly brown.

Add Garlic and saute for 30 seconds

Add Chopped or Diced Chicken and saute for 5 -7 minutes

Add Chicken Broth, Chopped Jalapeños with juice ( minus juice if you don’t want as spicy), Cumin and Oregano

Bring all ingredients to  a boil and then reduce heat to medium – low and let simmer for 12-15 minutes

Pour the entire jar of beans into dutch oven and mix well (do not drain prior too)

Continue to simmer for another 45 minutes on low

Add 2 cups of shredded cheese.

Mix well and serve

Ingredients

  • 1.5-2 lbs of Chicken ( Chopped or Diced)
  • 1 Medium Onion
  • 4 oz Jar or chopped jalapenos
  • 1 48 oz Large jar of Randall Great Northern Beans
  • 32 oz box of Chicken Broth
  • 2 tbsp of garlic
  • 2 tbsp cumin
  • 2 tbsp Oregano
  • 2 cups shredded cheese

Instructions
