Here is what you will need to make my no bake eclair cake:

No bake eclair cake is made with just a few simple ingredients. The great news is that keeping these items on hand is a breeze, that way you can whip up one of these cakes whenever you like!

We will need graham crackers, chocolate icing, vanilla pudding mix, milk, whipped topping, and magic shell chocolate sauce.

Remember, when you are making pudding recipes, milk alternatives will not set the pudding stiffly!

Folks have had trouble in the past so I try and make it a point to mention the fact that almond milk, coconut milk, etc. will likely end in a runny dessert!

We will be using a 9×13 inch baking pan to put everything in…though we won’t be baking this dessert…we’ll be popping it into the freezer!

How to make this delicious eclair cake:

Start by covering the bottom of greased baking pan with graham crackers.

Cover graham crackers with a generous amount of chocolate icing. I used nearly an entire container for the first layer.

Place pudding mix and milk into a large mixing bowl. Whisk until well combined and let sit for 5 minutes.

Fold in the whipped topping to your finished pudding. Place half the mixture on top of icing and smooth out.

Place another layer of graham crackers on top and another generous amount of icing.

Use the rest of your pudding mixture on top and smooth out.

Drizzle with Magic Shell chocolate and place in freezer for 3 hours.

Now it’s ready to serve and enjoy, easy and simple!

Ingredients

  • (1) 9x13 inch Baking Pan
  • Graham Crackers
  • (2) Containers of Chocolate Icing
  • (2) boxes of Vanilla Pudding Mix (3.4 oz.)
  • 3 cups of Cold Milk
  • 2 and 1/2 cups of Whipped Topping
  • Magic Shell Chocolate

Instructions
