Here is what you will need to make these lemon cookies at home:
Right now when we’re avoiding tons of extra grocery store trips or when we’re looking for an easy recipe that doesn’t have a bunch of complicated ingredients it’s recipes like this that make me so happy. Hopefully, you feel the same way.
For this recipe we will need a box of white cake mix, some lemon zest and juice, eggs, and vegetable oil. These are things I usually have on hand which means I can make a batch of these tasty cookies when the mood / cravings strike!
Make sure you are using a 15.25 ounce box of cake mix, or as close as possible. If not the liquid/flour ratio will be off and they consistency won’t hold up for making cookies.
Another helpful tip is to use parchment lined baking sheets or silicone baking mats. This will keep the cookies from sticking and make them easier to remove to a cooling rack!
How to make lemon cake mix cookies:
Now we get to the fun part! Making these lemon cake mix cookies is as easy as mixing everything up and baking! The recipe makes about 24 cookies, you can double the recipe very easily as well if you want to make a batch to share!
To start we need to combine everything except the lemon juice and zest in a large bowl and mix! Add the lemon juice and zest last and mix them just until they’re combined.
Place the bowl into the refrigerator for about 10 minutes before spooning the mixture onto baking sheets. I would leave them in there a little longer if you can, it helps to let the batter set up so it’s stiff enough to form cookies!
After the batter is cooled down you can spoon it out onto baking sheets, bake the cookies at 350 degrees Fahrenheit for 12 minutes or until edges start to turn golden brown.
If you like, when they’re done you can sprinkle them with a little bit of powdered sugar for a beautiful and sweet finish!

Why not use lemon cake mix instead of white? Thx
Lemon is harder to find, at least in my area. Use any flavor you like. Thanks!
If I use Real Lemon juice instead of an actual lemon, how much should I use?
I’ve never it done it that way so I can’t say for sure. According to Google replacing lemon juice for one large lemon is between 3 and 5 tablespoons.
I never found the list of ingredients?? I’m frustrated, elderly and disabled!! Please help they look so good!! My mouth is watering!!
