It’s no secret that I love pumpkin recipes…I’ve shared a bunch of them over the years and today I’m sharing a recipe that fits into TWO categories that I love…Pumpkin, and No Bake!
This no bake pumpkin pie is great for holidays but we also make it throughout the year when we’re craving a pumpkin pie. It’s such an easy recipe for pumpkin pie that you don’t even need a special occasion to whip one up!
Here’s what you’ll need to make this tasty pie:
This recipe uses 100% pumpkin puree or you can make your own! We also need cream cheese, packed brown sugar, vanilla extract, pumpkin pie spice, heavy whipping cream, cream of tartar, and a ready to use graham cracker crust!
That’s all. If you want to skip making your own whipped topping you can also just substitute whipped topping of your choice for the cream of tartar and the whipping cream!

Of course mixing bowls, a mixer, spatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!
What is the consistency like on this pumpkin pie?
This recipe won’t be as firm as a traditional pie. It’s a bit softer and more like a cheesecake / pudding cake recipe because it’s not baked!
It’s a tradeoff that I’m happy with because it still comes out great and it easy to serve in slices it’s just not hard like a traditional pumpkin pie.
How many servings does this recipe provide?
Realistically you can cut this no bake pumpkin pie into as many or as few slices as you like. I usually do between 6 and 8 slices from a pie this size.
If you are feeding a crowd and are already in the kitchen anyway feel free to double or even triple the recipe. It’s really easy to make the pies in an assembly line style process and it’ll save you a bit of time. You can always make an extra to share or gift…tis the season for tasty treats and sharing!
Can I make my own graham cracker crust for this easy pie?
You can absolutely make your own crust for this recipe. I like the ready made crusts because they’re just so simple to fill and serve. If you have dietary restrictions like diary or gluten intolerances you can use graham crackers and butter / ghee that suit your needs and make your own.
Homemade graham cracker crusts are really easy to prepare so feel free to try out this homemade version and use the ingredients you need to in order to fit everyone’s health needs!
How to make the best easy pumpkin pie:
Get out a large mixing bowl and beat the cream cheese for about 30 seconds until it’s creamy. This should be softened cream cheese so there shouldn’t be any lumps.
Now add in the brown sugar and mix well.
Mix in the pumpkin pie spice, vanilla extract, and pumpkin puree. Mix until well combined.
Use a hand mixer or a stand mixer to whip the heavy whipping cream and cream of tartar for about 2 minutes. Use a medium high speed and add in more cream of tartar if necessary to get stiff peaks.
You’ll know it’s stiff peaks when you remove the beater and whipped cream can stand up without falling over.
Split the whipped cream into 2 portions, 1 cup in each.
Add the whipped cream, 1 cup, into the pumpkin mixture and fold it together with the pumpkin filling until there are no more white streaks. Do this by hand with a spatula, not with a mixer!
Put the pumpkin filling into the crust that is already made!
Now it’s time to decorate the top of the no bake pumpkin pie with the remaining whipped cream. You can get fancy and swirl it around the edge or just put it on top like I did!
Put the pie into the refrigerator and leave it there for at least 4 hours, overnight is preferable!
