When it comes to casseroles I’m pretty much up for anything. I love a delicious dinner that can be on the table in one dish without little in the way of muss & fuss. My beef pot pie recipe is quick and easy to put together and the whole family devours this simple dinner.

We don’t usually have a ton of leftovers when I make this tasty dinner recipe but it does keep well in the refrigerator for a few days. If you want to meal prep with this recipe you can make a batch ahead of time to freeze or portion out into containers.

If you have people in your life that need help with a meal or two this is definitely a good one to deliver. I like that I can make a pan of this beef pot pie and drop off the whole casserole hot and ready or take it ready to bake so they can make it when they need it. My grandmother loves this recipe and I always drop off a meal or two when I make it.

Here’s what you’ll need for this easy dinner recipe:

This looks like a lot of stuff but do not worry, it’s all very simple and straightforward so don’t let a longer ingredients list turn you off to this recipe.

  • Beef tips or stew meat
  • Olive oil
  • Sliced baby bella mushrooms
  • Onion, chopped
  • Carrots, peeled, halved lengthwise and sliced
  • Tomato paste
  • Garlic, minced
  • Dry red wine (or additional beef broth)
  • Beef broth
  • Worcestershire sauce
  • Ground thyme
  • Bay leaf
  • Frozen green peas
  • Cornstarch
  • Puff pastry
  • Egg, whisked together with 1 tablespoon water

How to my make beef pot pie recipe:

  1. Turn on the electric pressure cooker setting to saute and heat until hot. Add the olive oil and begin browning the meat in small batches. Brown on all sides and then remove until all meat is seared. (Optional: In a hurry, you can skip this step but it does add a richer flavor to the finished beef pot pie.)
  2. Add the beef broth to the electric pressure cooker and scrap the bottom with a wooden spoon to remove any cooked on pieces.
  3. To the pot, add the meat, vegetables, wine (if using), worcestershire sauce, thyme, and bay leaf. Stir to combine. Cover and cook on manual or “pressure cook” for 15 minutes. Allow pressure to release naturally for 5 minutes before quick release.
  4. Return the electric pressure cooker to the saute function. Add the peas.
  5. Carefully remove about 1 cup of the liquid from the pot and mix with the cornstarch. Pour the slurry back into the pot. Cook for about 5 minutes, stirring occasionally, or until the sauce begins to thicken.
  6. Preheat the oven to 400 degrees. Prepare a 9 x 13 baking dish with nonstick cooking spray. Carefully transfer the beef stew to the baking dish.
  7. Cover the beef stew with puff pastry, cutting the pastry if needed to fit. Keep in mind that the puff pastry will shrink slightly as it cooks so do not fret if the pastry does not fit perfectly.
  8. Brush the puff pastry with the egg wash (egg whisked with water).
  9. Bake the pot pie for 30 to 35 minutes or until golden brown.
  10. Allow the pot pie to rest for 5 to 10 minutes before serving for the sauce to thicken.

Can I make this beef pot pie without an Instant Pot?

You can make this recipe without a pressure cooker but it will take longer. Just make sure you are cooking the filling until everything is cooked through. The baking time won’t be enough to just put everything in and let it simmer!

Ingredients

  • 2 to 3 pounds beef tips or stew meat
