When it comes to making rainbow recipes you might look at the photos and be a little intimidated. The truth is that it’s not hard to make these great cookies.
Another rainbow favorite in our house is this Marshmallow Fudge Recipe! It’s super cute and very colorful. Tastes great too so it’s not just a colorful flop..same goes for these cookies which get their flavor from the Jello powders.
How many cookies does one batch make?
One batch of these cookies will make about a dozen cookies. You can make them smaller and probably be closer to two dozen cookies but it’s also really easy to just double the recipe so you can have extra cookies to share.
Jello cookies go quick in our house so we never have to worry about them sitting around and going stale! If you double the recipe or make a triple batch you can also use more Jello flavors so that you can add more colors to your rainbow!
Is it possible to make these Jello cookies gluten free?
You can absolutely make this Jello cookies recipe gluten free. I would recommend using a mix like this in place of the regular flour.
The King Arthur gluten free baking flour is great for making all kinds of great baked goods and it replaces regular flour really nicely so you shouldn’t have any problems with texture, baking time, or moisture levels.
There are other gluten free baking blends out there that work really well too. I’ve used the Pillsbury one, as well as the Bob’s Red Mill one and they are all work great.
All of the other ingredients in the recipe should be naturally gluten free. Keep an eye on additives and be sure you don’t end up with any sneaky gluten and then you’re all set!
What do I need to make cookies flavored with Jello?
This recipe uses pretty standard ingredients for a sugar cookie recipe. We’ll be using butter, sugar, eggs, flour, baking powder, baking soda, Jello, and you can top them with silver edible glitter or some rolling sugar whatever you like!
You can use whatever flavors and colors of Jello you want for this cookie recipe. Use your favorites, let the kids pick there favorites, make them themed for your holiday or party, it doesn’t matter, they’ll be delicious every time!
There’s no hard and fast rule about the flavors here, just use what you like and they’ll be amazing cookies that are brightly colored and delicious.

How to make colorful and cute cookies with Jello:
This Jello cookies recipe is really easy to make. Here are the step by step instructions so you can see just how we make these gorgeous and brightly colored cookies to share.

Preheat oven to 350 degrees and line baking sheet with parchment paper
Cream butter and sugar then add egg
In a separate bowl mix flour, baking powder, and baking soda
Add to wet mixture, mix until soft dough forms
Divide dough into 4 separate bowls
Add 4 tablespoons of each Jell-O to the bowls, 1 flavor each bowl
Use hands to knead until full combined
Scoop, roll into a ball, flatten gently and place on lined baking sheet
Bake 10 minutes
Rest 5 minutes on baking sheet then move to cooling rack to cool
Dust with sprinkles and enjoy!

I used pink jello and went exactly by directions, added jello to dough and they did not turn pink! Did I miss something in directions? Thanks!
