Lemon Fudge Recipe

Lemon fudge is a fresh and delicious dessert recipe that the whole family will love. My lemon fudge has cookies, fresh citrus flavor, and all the sweet deliciousness we expect from fudge! Fudge recipes are easy, fun, and tasty!

The great thing about this easy no cook fudge recipe is that it requires very little in the way of actual effort. It will look and taste like you spent hours in the kitchen but in truth, it’s done after just a few short minutes. Pop it into the refrigerator to cool and before you know it you have a sweet treat everyone will love.

This is a great recipe to share with friends and family. It’s sweet but also unique. It’s not the traditional chocolate or peanut butter fudge recipes we know and love.

Here is what you will need to make my easy lemon fudge:

It only takes a few simple ingredients to make this great homemade fudge. Most of these ingredients I can keep on hand and then when I’m ready to whip up a batch of fudge, everything I need is already in the pantry.

  • 1 and ½ 12 ounces bags of white chocolate chips
  • 1-14-ounce can sweetened condensed milk
  • 1 cup of crushed lemon wafer cookies
  • 1 teaspoon lemon extract
  • 8×8 baking pan lined with parchment paper
  • Cooking spray

Do I need to line the pan with parchment?

Absolutely, make sure to line the pan with parchment paper so that you can lift the block of fudge out of the pan after it’s cooled.

If you are using a glass pan or if you don’t care about scraping your pan with a knife I guess you could skip the parchment lining but I’ve found that you will get much nicer results if you line the pan and can cut the block of fudge on a cutting board once it is cooled.

How to make lemon fudge:

This is a pretty simple recipe. You can make lemon fudge in just a few minutes, most of the time is just letting it cool until it’s stiff enough to cut!

  1. Add lemon wafer cookies to food processor and crush. 
  2. Spray pan with cooking spray and cover bottom and sides of the pan with parchment paper and set aside. 
  3. Melt chips in microwave in 30 second bursts until completely melted and smooth. Do not cook for more than 30 seconds at a time or you will burn them. 
  4. Mix in the sweetened condensed milk and lemon extract until smooth.
  5. Fold in 2/3 of a cup of the crushed cookies. Press the remainder of the cookies into the top of the fudge. 
  6. Cover baking pan with foil and place in refrigerator until fudge is firm. Place fudge on cutting board and cut into 1-2” pieces and enjoy!

How many servings are in a batch of this lemon fudge?

Each batch of this fudge makes about 16 servings. That is achieved by cutting the pan into 2 inch squares. You can make the fudge into smaller or larger pieces if you like, it’s a sweet treat so there’s really no right way to do it…if you make changes just be sure to recalculate the nutritional information!

If you need to make more you can easily double the recipe and make two 8×8 pans of fudge or one larger sized pan of fudge.

To make a half batch of this fudge you would need to just reduce everything on the ingredients list by 1/2. You could use a loaf pan or just make an 8×8 pan and the product will be a thinner batch of fudge.

Ingredients
