It’s hearty, but easy enough to make that you can enjoy it no matter how busy your morning happens to be. I love to make a batch and then use it for quick hot breakfasts throughout the week.

You can easily make this tatertot breakfast casserole and then reheat it throughout the week. I LOVE having a family friendly breakfast recipe in the fridge that the whole family can basically serve themselves!

This recipe has quite a few ingredients but they’re all relatively simple ones. Check out the list below to do your shopping so you can include this tasty breakfast recipe in your next meal plan!

This recipe calls for frozen tater tots, cheddar cheese, black pepper and salt. You will need garlic powder, half and half, eggs, and ground sausage too!

The nice thing is that a lot of the fresh ingredients for this recipe can be prepped and frozen so you can use them in this recipe whenever you want! It’s even nicer when it’s tough to get out to the grocery store, you are extra busy, etc.

The rest of them are things you probably keep on hand most of the time anyway so there’s no real need to head out to the grocery store to get stuff to make this recipe. You can keep items on hand and whip this up whenever you want a nice breakfast for dinner, meal prepped breakfast, or Sunday brunch recipe!

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are great for all kinds of baking and not just cookies! My husband loves them for making biscuits, pizzas, and more!

Of course mixing bowls, a mixerspatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

How to make cheesy tater tot breakfast casserole:

This is a really easy recipe to make in the morning…that’s great since I never wake up feeling like I want to spend a bunch of time in front of the stove or oven!

Preheat the oven to 350 ℉.

In a medium skillet, cook ground sausage over medium heat while breaking into small pieces until no longer pink.

Remove skillet from heat, drain grease from sausage and set aside.

Grease a 9′ x 13′ baking dish with cooking oil spray. (Glass works best.)

Spread the crumbled sausage in an even layer over the bottom of the baking dish.

In a medium bowl whisk eggs, half and half, garlic powder, salt and pepper until well combined.

Top with shredded cheese.

Place frozen tater tots evenly over the top of sausage, egg and cheese mixture. Do not submerge tater tots.

Bake for approx. 50 minutes or until a knife inserted in the middle comes out clean.

Remove the casserole from the oven and let it sit for 5 minutes before serving.

  • 1 lb ground sausage
  • 8 large eggs
  • 3/4 cup half and half
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar cheese, shredded
  • 1 lb frozen tater tots

Instructions

  1. Preheat the oven to 350 ℉.
