Sometimes you just need to start the day off with a hot breakfast. If that is the case, this tatertot breakfast casserole is the perfect recipe to try.

It’s hearty, but easy enough to make that you can enjoy it no matter how busy your morning happens to be. I love to make a batch and then use it for quick hot breakfasts throughout the week.

You can easily make this tatertot breakfast casserole and then reheat it throughout the week. I LOVE having a family friendly breakfast recipe in the fridge that the whole family can basically serve themselves!

Here is what you will need to make my favorite tatertot breakfast casserole:

This recipe has quite a few ingredients but they’re all relatively simple ones. Check out the list below to do your shopping so you can include this tasty breakfast recipe in your next meal plan!

This recipe calls for frozen tater tots, butter, olive oil, breakfast sausage, onions, milk, half and half, seasoned salt, cayenne pepper, eggs, bell peppers (green and red), shredded cheese (cheddar and pepper jack), as well as some salt and pepper to taste!

The nice thing is that all of the fresh ingredients for this recipe can be prepped and frozen so you can use them in this recipe whenever you want! It’s even nicer when it’s tough to get out to the grocery store, etc.

How to make cheesy tater tot breakfast casserole:

This is a really easy recipe to make in the morning…that’s great since I never wake up feeling like I want to spend a bunch of time in front of the stove or oven!

First we need to line up the tatertots in a greased 9×13 baking dish. Add the olive oil to a large skillet so we can prep the sausage and onions which need to cook for about 8-10 minutes.

Set them aside to cool for a few minutes and then layer the mixture over the tater tots. In another bowl mix together the milk, half and half, seasoned salt, cayenne, eggs, bell peppers, half of both kinds of cheese, and salt and pepper to taste. 

Give them a little mix to combine and then pour the mixture over the tatertots and sausage mixture. 

Add the rest of the cheese, cover the baking pan with foil and put it into the refrigerator overnight.

In the morning you can pop it into the oven at 325 degrees F for 25 minutes. Remove the foil after 25 minutes and bake for another 20-35 minutes until the top is browned and the casserole is cooked through. 

After it has a few minutes to cool you can cut it into squares for serving!

Ingredients

  • * 16-ounce bag frozen Tater Tots®
  • * Butter, for the baking dish
  • * 1 tablespoon olive oil
  • * 1 pound spicy bulk breakfast sausage
  • * 1 medium onion, very finely diced
  • * 1 cup milk
  • * 1/2 cup half-and-half
  • * 1/4 teaspoon seasoned salt
  • * 1/4 teaspoon cayenne
  • * 4 large eggs
  • * 1 red bell pepper, very finely diced
  • * 1 green bell pepper, very finely diced
  • * 2 cups grated Cheddar cheese
  • * 1 cup grated pepper jack cheese
  • * Kosher salt and freshly ground black pepper
