Easy Pumpkin Pie Bites

These no bake pumpkin pie bites are a favorite treat in our house. We eat them year round but they make a great holiday dessert! No bake desserts are my favorite, they are delicious yet easy to make!

What do I need to make these pumpkin pie bites?

This recipe is really easy to scale up or down if need be. You can cut it in half if you think you won’t eat all of these in a timely fashion or you can double it if you have guests to feed!

  • Phyllo shells
  • Pumpkin puree
  • Whole milk ricotta
  • Ground cinnamon
  • Sweetened condensed milk

Once you see how easy these pumpkin pie bites are, you are never going to want to make the real deal again. It’s the perfect combination of sweet and savory and in just four simple steps you’ve got yourself a family friendly, crowd pleasing, holiday winning dessert!

How to make no bake pumpkin pie bites:

This recipe could not be more simple. There are only four steps so it’s easy enough that you can even have the kiddos help in the kitchen if you like! You can also use a stand mixer to make this even more simple. Just dump everything in, give it a good whisk, and it’s ready to go into the shells!

  1. In a mixing bowl, combine pumpkin, ricotta, cinnamon and sweetened condensed milk.
  2. Whisk until combined.
  3. Fill phyllo shells with a small spoon.
  4. Refrigerate for an hour before serving.

How should I serve up these tasty pies?

These look so cute on a tiered cupcake stand for parties and events so keep that in mind for Thanksgiving. Otherwise you can put them on a big tray, arrange them around other desserts for a grazing table design, or you can always serve them up on their own little plates for individual servings.

No matter how you serve them up, one this is for sure…everyone will love these delicious no bake pumpkin pie bites!

A stand mixer is a must in our house. We’ve had our Kitchen Aid for more years than I care to admit and once we got one there was no going back. It makes everything from shredded chicken to desserts a dream!

Another kitchen staple for baking is a pastry bag! You can get the reusable ones or just use a zipper bag with the corner cut off to really make filling the phyllo shells a simple and efficient process!

Can I use this filling for other types of desserts?

I haven’t tried this filling in anything else yet but I have some plans…I think this would be great in pizzelle tubes for a cannoli-esque dessert.

Another way you could use this is to make a no bake pumpkin pie. If you have a favorite kind of shell or graham cracker crust that you like to use this makes an easy pie though it might be on the soft set side so keep that in mind.

I’m not one for making fancy pastries but I would be willing to bet this would make a great donut filling as well. There’s just something about the ricotta and pumpkin combo that makes this a super versatile pumpkin pie filling.

Ingredients

  • 30 phyllo shells
  • ⅓ C pumpkin puree
  • ½ C whole milk ricotta
  • 2 teaspoons ground cinnamon
  • ⅓ C sweetened condensed milk
