We are going to take something you can grab in just a few moments at the grocery store and turn it into a treat that is worthy of any party, gathering, or event.

Is this a cheesecake on a stick recipe?
Yes! We will be taking a frozen cheesecake from any grocery store frozen isle and turning it into cheesecake on a stick with a unicorn flair.
What could be better than a dessert you can take with you while you are on the go?! Especially one that looks as cute as all this?!
If you are hosting an event or party you will love how easy these unicorn cheesecake slices are to serve.
Everyone can have their own slice on a stick and they’re able to eat it without any utensils. For outdoor parties and summer gatherings these are adorable to serve up on a platter and everyone can just grab and go!
What do I need to make unicorn cheesecake?
This super simple recipe uses a frozen cheesecake, popsicle sticks, white chocolate candy melts, and unicorn sprinkles.
I’ve linked to my favorite unicorn sprinkles and you can also try out some of these other ones which are super cute and fun. Neon sprinkle mixes are also really cute and fun for this recipe.
You will also want some popsicle sticks which you can grab at Walmart or any craft supply place. You can also order them online. The wide ones work best!
How to make Unicorn Cheesecake pops:
These pops are really easy to make. Each small cheesecake will make about 6 pops. You can cut the slices smaller / larger as needed but this seems to work the best in terms of servings / size wise.
You can also make a cheesecake of your choice. If you make a cheesecake and are worried about it being too soft you can always freeze it after you cut it and insert the popsicle sticks! Frozen cheesecake on a stick is pretty much the best summer treat ever.
Place the cheesecake on a cutting board and cut into 6 even slices.
Insert a popsicle stick into each slice from the wide end through the middle of the cheesecake, as far into the cheesecake as you can while ensuring it doesn’t poke through the other side.
In a small microwave-safe bowl, melt the candy melts for 20 seconds. Stir and reheat as needed. Add coconut oil or shortening if the candy melts are not as smooth as you’d like after melting.
Holding one cheesecake stick over the bowl of candy melts, use a spoon to smooth 2 Tablespoons of candy melts all over the cheesecake. We chose to leave the wide end bare, but you can cover up that side, too.
Place the cheesecake on a plate, cookie sheet or even back on the cutting board and garnish with sprinkles.
Repeat with all cheesecake slices.
Allow the candy melts to set for about 1 hour before serving. If it’s very warm you can also pop them back into the freezer on a sheet pan for a bit to help them stay set and firm. For summer parties this is a great way to keep them perfectly set and frosty for a sweet treat that can withstand the heat for a bit!
Kitchen essentials for tasty recipes like these cheesecake pops:
When you head into the kitchen to make some of these great recipes you’ll want to have the best tools on hand.
I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are a must when doing cake mix recipes which can settle and become thin at lot easier than traditional cookie dough. They’re also nice when dealing with things that you want to make without much mess for cleanup!
Of course mixing bowls, a mixer, spatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!
