This easy no-bake lemon cheesecake is super simple to make and very delicious. The bright citrus flavor of the lemon goes great with the creamy texture of the cheesecake.

This no-bake lemon cheesecake only takes about 30 minutes to prep and then it will need to go into the refrigerator overnight to set and firm up. It’s a great dessert to share and of course you can prep it in advance because it will need time to set!

No bake lemon cheesecake is beautiful, it’s gorgeous to serve for special occasions and family gatherings. The lemon layer of jelly on top is bright and lovely, not to mention delicious!

Is this a pudding cheesecake?

No! I have shared some no-bake cheesecake recipes above and I’ll share some below that are made using pudding but this recipe is not pudding based.

It will set and be more firm like an actual cheesecake because we are not using pudding as the base material. If you are looking for a no bake lemon cheesecake that is as close to a baked cheesecake as you can get without actually having to bake a cheesecake…this is the one you want!

Can I make my cheesecake a different flavor?

I do feel like you could make this pretty much any flavor you’d like. It’s easy to swap out the lemon flavored ingredients to something else.

If you don’t like lemon or you just want to get creative and try something new, give it a whirl. The process will be the same you will just need to adjust the ingredients to make this no-bake lemon cheesecake whatever flavor you’d like!

Kitchen essentials for tasty dessert recipes:

When you head into the kitchen to make some of these great recipes (like no bake lemon cheesecake) you’ll want to have the best tools on hand.

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are a must when doing cake mix recipes which can settle and become thin at lot easier than traditional cookie dough. 

Of course mixing bowls, a mixerspatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

For this recipe you’ll also need a cheesecake pan which you can grab here. I like the springform ones because they’re easy to work with!

Ingredients needed for a no-bake lemon cheesecake:

For this super tasty lemon cheesecake we will be needing just a handful of ingredients. You can find the full amounts in the printable recipe card at the bottom of the post and of course I’ll share the shopping list with you here.

You’ll need to grab cookies or graham crackers for the crust, butter, lemon yogurt, cream cheese, sugar, agar agar powder, water, and lemon gelatin powder.

That’s all you’ll be needing to make a no-bake lemon cheesecake that doesn’t use pudding!

How to make an easy lemon cheesecake:

Start by crushing the cookies and mixing them with the butter. Combine until the mixture is well mixed.

Place the mixture in the cheesecake pan, and press the mixture into the bottom with your hands. You can put it into the fridge for an hour to make sure it sticks to the bottom and sides of the pan, but it is not necessary.

In a large mixing bowl, add the lemon yogurt, cream cheese, sugar, and agar agar powder. Stir until well combined. Once everything is well combined, pour the mixture into a medium-sized pot on medium heat and bring the cheesecake mixture to a boil, stirring it frequently. This step is necessary, as the agar agar only works once you heat it up.

After this step, put your mixture over the cookie crust and refrigerate it for about 6 hours or until firm. Once the mixture is solid you can start making the jelly.

I highly recommend following the instructions written in your jelly powder container, as the process can vary depending on the brand. Even so, here I will tell you how I did it.

Dissolve the gelatin powder in a cup of boiling water and stir until perfectly dissolved.

Add another cup of cold water and stir again.

Pour the final product over your cheesecake only if it has already solidified in the fridge and wait another 3 hours until the jelly also solidifies.

Decorate with lemon, strawberry, raspberry, or icing sugar to your liking, and your no-bake lemon cheesecake is ready to enjoy!

  • 5 oz of graham crackers (140 g)
  • ¼ cup of butter (55 g)
  • 2 cups of lemon yogurt (490 g)
  • 7 oz of cream cheese (190 g)
  • ½ cup of sugar (105 g)
  • 1 tsp of agar agar powder
  • 2 cups of water (480 ml)
  • 6 tbsp of lemon gelatin powder (57 g)
